Team Rocket’s Kitchen: Beef Taco Casserole

James and I have already made a few things from here – and most have them have turned out pretty great. Tonight we are returning an old favorite – a beef taco bake. It’s basically a taco casserole. There’s a couple things we changed about their original recipe so I’m gonna share this delicious meal with you! ^_^

You will need…

(2) 10 ounce cans of Dice Tomatoes with Green Chilies
1 1/2 pounds of ground beef  – we just used a pound though
(1) 1 ounce package of taco seasoning mix
(1) 16 ounce can of refried beans
2 cups of Colby Jack cheese – we used a bag of that Mexican blend instead, adds a little extra flavor!
8 taco shells – Instead of taco shells we added Doritos. Just eyeball it. If it looks like it’s about the sames size as 8 taco shells, you’re probably good.
And a skillet or something to cook your beef in / a 9×13 baking dish for the casserole

Now, I know this is supposed to be “6 ingredients” but it also says to add salt and pepper to taste. We added a Garlic, Chili, Salt blend that I talked about in a post somewhere. It’s delicious.  (ha! found it!)

Here’s what you do…

Preheat your oven to 475 degrees! Drain your tomatoes but reserve a 1/2 cup of the juice. Cook the beef on a medium heat to brown it (so for usually about 5 to 8 minutes) then drain it. Add the taco seasoning and cook for an additional 30 seconds. Then add one can of the tomatoes along with the juice you reserved. Simmer that until it’s nice and thick – about 10 minutes. Add your salt blend. 🙂

While that simmers you’ll have time to make your next mixture. Combine the refried beans with the other can of tomatoes and mix it up well. Spread the mixture evenly along the bottom of the 9×13 baking dish. Pour roughly 1 cup of the Mexican blend cheese over the top of that. Then spread the beef mixture evenly on top of that layer. Next you’ll add another layer of cheese, a little thinner this time – so about 1/2 cup. Crush up your favorite Doritos and sprinkle them along the top. We used the Salsa Verde ones before, which really added an extra kick. But this time we just used Cool Ranch. Because that is best Dorito. Last sprinkle the rest of the cheese along the top.

Bake it in the oven until the cheese is bubbly. It generally takes about 15 minutes or so. You could serve it with some sour cream or extra cheese, or both! Endless possibilities!
